I think what you're experiencing is called a "Ki-ki"... an orchid 'pup' on the flower stalk. It isn't all that common.
These 'pups' can be started as a new plant. Once they've developed (look a little like a miniature orchid plant), remove them. Fill a clay pot with coarse sphagnum moss, and wet it.
Set the pup onto the moss. Put the whole thing into a large ziplock bag, and zip it closed. Keep it in a moderate light window, and warm. In a few weeks, if it is going to be a success, you'll see roots tendril out from the base and more leaves develop.
Once it's 'looking good', open the bag. Leave it in the bag, opened, for a few weeks. That will help it acclimate to a lower humidy environment. After a couple weeks like that, it should be ready for normal treatment.
