I think you should. The gel is just to help prolong the life of the flower....

Yes you should, the gel will swell up and hold the water and release it slowly, your orchid will thrive with a constant slow release of water rather than too much or too little. the gel takes the guess work out of watering. keep your orchid in a bright position but out of direct sunlight, and of course you should not keep it close to radiators.
